Wine Cellar and Wine Room Humidifiers

Keep your wine in the barrel, not in the air

Above-ground barrel rooms lose wine to dry air every day. Smart Fog’s non-wetting wine humidifiers hold your barrel room, cellar or wine storage room at a steady target, typically around 70% RH at 55°F for barrel aging, so you top off less often, keep staves tight, and keep floors, racks and labels dry.

What Dry or Damp Air Costs a Winery

Oak barrels breathe. In dry air, wine moves through the staves and evaporates, so you lose volume and spend labor topping. In air that is too damp, mold grows on barrel heads, walls and labels. The right humidity sits in a narrow band, and above-ground rooms drift out of it with every season and every cooling cycle.

Dry air: lost wine and more topping

Below about 60% RH, evaporation through the staves speeds up, and water tends to leave faster than alcohol, so wine loses volume and its balance shifts. Warm, dry barrel rooms can lose 5% or more of their volume a year. Every point of loss means topping labor, top-up wine drawn from other lots, and more oxygen contact in the barrel.

Damp air: mold and slippery floors

Above about 80 to 85% RH, mold takes hold on barrel heads, walls and labels, and cold surfaces start to sweat. Wet floors become a slip hazard for cellar crews. Humidifiers that release water instead of vapor make both problems worse.

Your cooling dries the room

Most barrel rooms run between 55°F and 60°F. The cooling that holds that temperature also pulls moisture out of the air every time it runs, so humidity drops fastest in the hottest months and on busy days when doors open most.

How Smart Fog Humidifies a Wine Cellar Without Wetting It

Smart Fog turns water into dry fog: droplets fine enough to evaporate in the air before they reach barrels, racks or floors. A sensor and controller hold your setpoint automatically. Barrel rooms are typically held around 70% RH at 55 to 60°F (many run 70 to 80%), and bottle cellars at 60 to 70% RH and 50 to 59°F.

Less evaporation, less topping

Holding the room at its target slows evaporation through the staves and keeps barrels tight, so crews top off less often and less top-up wine is pulled from other lots. Empty barrels stay conditioned between fills instead of drying out.

Moisture in the air, not on your barrels

The fog is absorbed into the cellar air, so there are no puddles, no dripping nozzles and no wet barrel heads. With purified water, there is no mineral white dust on bottles or labels either. Humidity is held below the levels where mold takes hold.

Works with your cooling, not against it

Evaporation absorbs heat, so dry fog takes a little load off your cooling instead of adding heat the way steam humidifiers do. Your cooling holds temperature, and Smart Fog holds humidity, each without fighting the other.

Group 1

Steady through every season

Smart Fog’s S Series sensors read humidity to within 1 to 2% (depending on model). The controller adjusts output as doors open, cooling cycles run and seasons change, and optional Modbus or BACnet integration sends readings and alerts to your building system.

The right wine room humidification setup depends on the size of the room, how it is cooled and how you want to install it. Systems scale by adding units, so a boutique cellar, a commercial wine room and a multi-room production facility use the same technology. Wall-mounted units for barrel rooms:

The ES100 direct space humidifier mounts on a wall and humidifies the room directly. Each unit adds up to 3 gallons (11 liters) of water an hour; add units for larger rooms.

Through your air handler:

Cellars with ducted cooling can humidify the supply air with the TS100 in-duct humidifier, so moisture reaches every part of the space the duct serves.

Caves and large production cellars:

The MS100 custom grid system spreads dry fog evenly across large spaces, up to 10,000 sq ft per system.

Portable for peaks and temporary storage:

The ES100M portable unit runs on wheels for harvest peaks, temporary barrel storage or moving between rooms.

Clean water, monitored remotely:

ZeroTDS filtration supplies purified water, so no minerals reach bottles or labels. Optional Modbus and BACnet integration puts humidity readings and alerts into your building or cellar management system.

Why Wineries Choose Smart Fog

Smart Fog’s dry fog is non-wetting, so there are no puddles, dripping nozzles or wet barrel heads. Humidity is held within 1 to 2% of setpoint by Smart Fog’s own sensors. Evaporation absorbs heat rather than adding it, so your cooling is not working against your humidifier the way it does with steam. Each unit draws about 0.4 kW at full output, based on average compressed air use, with no heating elements and no moving parts in the nozzles. Every system is made in the USA by a company with more than 40 years in humidification.

FAQs

What humidity should a wine cellar be?

For barrel aging, around 70% relative humidity at 55°F is widely treated as ideal, and many barrel rooms hold 70 to 80%. Bottle cellars and wine storage rooms usually aim for 60 to 70%. Below about 60%, evaporation and cork drying speed up; above about 80 to 85%, mold becomes a risk.

How does humidity affect wine loss in barrels?

Dry air pulls wine through the oak staves, where it evaporates. At lower humidity, water tends to leave faster than alcohol, so the wine loses volume and its balance shifts. Holding a barrel room near its target slows evaporation and reduces how often barrels need topping.

Will a humidifier add heat to my cellar?

Not a Smart Fog system. Dry fog evaporates in the air, and evaporation absorbs heat, so it takes a little load off your cooling instead of adding heat the way steam does. It runs on its own sensor and controller alongside your cooling, and can report to your building system over Modbus or BACnet.

Will it leave condensation, puddles or white dust?

No. The droplets evaporate before they reach surfaces, so barrels, racks and floors stay dry. Running on purified water, for example through a ZeroTDS filter, keeps minerals off bottles and labels. Upkeep is mainly filter changes and periodic inspection, with no heating elements to descale.

How big a system does my cellar need?

It depends on room volume, how dry the incoming air is, how often doors open and how hard the cooling runs. Each wall-mounted unit adds up to 3 gallons of water an hour and needs compressed air (about 4 CFM at 100 psi) and water at about 10 psi. The humidifier sizing calculator gives a first estimate, and a Smart Fog engineer sizes the final system.
